Easy Copycat Egg Bites: My Make-Ahead Breakfast for Busy Mornings
Updated: Sep 16

Mornings with three little boys can get chaotic fast, so I love having an easy breakfast already prepped and ready to go. These copycat egg bites are one of my favorite make-ahead options because they are simple, filling, easy to reheat, and perfect for busy mornings.
I make a batch at the beginning of the week, keep them in the fridge, and breakfast is basically handled. Add some fruit, toast, or yogurt on the side and we are out the door. 😂☕️
Copycat Bacon & Gruyère Egg Bites
Makes about 12 egg bites
Ingredients
• 8 large eggs • 1 cup low-fat cottage cheese • 8 slices bacon, cooked and crumbled • Shredded Gruyère cheese, about 1 cup • Salt, pepper, and your favorite seasonings • Cooking spray or a little oil for the muffin mold • Water for the baking sheet
How to Make Them
1. Preheat your oven to 350°F. Cook 8 slices of bacon until crisp, then set them aside to cool before crumbling.
2. Crack 8 eggs into a blender. Add 1 cup of low-fat cottage cheese and your seasonings.
3. Blend for a few seconds until the mixture is smooth and creamy.
4. Shred your Gruyère cheese and set it aside.
5. Pour water into a rimmed baking sheet. This creates a gentle water bath while the egg bites bake and helps keep them soft.

6. Place a silicone muffin mold on the baking sheet and grease each cup.
7. Pour the blended egg mixture into each cup, leaving a little room at the top.

8. Add crumbled bacon to each cup, then top with shredded Gruyère cheese.
9. Give each cup a small stir so the bacon and cheese are mixed through the egg mixture.
10. Bake for about 25 minutes at 350°F, or until the centers are set.
Let them cool for a few minutes before removing them from the silicone mold.
Why I Love These for Meal Prep
I do not want meal prep to mean spending my entire Sunday cooking. I just want a few easy things ready in the fridge that make the rest of the week less chaotic. These egg bites check all the boxes: easy, protein-packed, customizable, kid-friendly, and quick to reheat.
On preschool mornings, I can grab a couple of egg bites, add fruit, make my coffee, and we are moving. That is my kind of meal prep. 😂
How to Store & Reheat
Once completely cooled, store the egg bites in an airtight container in the refrigerator for 3–4 days. To reheat, microwave briefly until hot throughout. I usually start around 30 seconds and add a little more time if needed.
You can also freeze them. Let them cool completely, freeze them individually, and then transfer them to a freezer-safe bag or container. Thaw overnight in the refrigerator before reheating for the best texture.
Mama Kim Tip
If your kids prefer simpler flavors, keep a few cups mostly cheese and make the rest with bacon, extra seasoning, or other add-ins for the adults. One batch, two breakfasts.
🤎
Anything that helps me get three kids fed in the morning and still leaves enough time to make my coffee earns a permanent spot in the rotation. ☕️
